Manual peeling of sweet potatoes with knives is still much typical despite sweet potatoes being one of the most common nutritional foods globally. The development of the peeling machine is geared towards eliminating this manual process. Engineering properties of the raw material (sweet potato) were analyzed, and standard engineering data were assessed as well.

Peeling is one of the most integral parts of food processing, where the product’s skin is removed before the actual processing. The most mechanical peeling is done using tools like knives and blades. One of their most used products is potato. This article discusses the design and fabrication of a small-scale peeling machine.

Materials and methods for constructing a potato peeling device

Design consideration- For the high quality of the peeled potato, the fabricated blades for peeling should not contaminate but resist corrosion from water. The material should be stable, rigid, inflexible, available, and accessible to fabricate. Engineering properties like torsion moment, pressure, design power, and torque are also considered.

Design analysis of machine components- Design calculations are mainly done on blades, discs, and shafts. The disc is circular, and it is where the potatoes are peeled. 

During the process of using potato peeler, the disc rotates potatoes. The disc is unstable to allow the movement of potatoes. At the center of the disc is a solid shaft for supporting the disc. 295 mm thick disc is 2.5 mm in diameter.

The pairing tube comprises three main parts- tube top spherical of 65 mm, main tube- 500 high and 400 mm diameter, and output hole of 16 mm by 140 mm by 130 mm.

Material selection and fabrication– The angle iron of 60mm by 60 mm with 5 mm thickness is used. The plate and tube holder is stainless steel of 2.5 mm. the ankle supports the disc is solid with 10 mm diameter and 160 mm length. A water reservoir is used to store water for spraying. There is the presence of the regulation of the pressure, and the potentiometer sets the point in the analog. 

Engine testing- In collecting data, 9% of sodium hydroxide is used for pre-treatment. The pressure of water from the pump is controlled by pulse width modulation. Three variations in water pressure are used based on the duty cycle.

Machine test- the machine test is performed by making different sodium hydroxide treatments on potatoes at additional water pressure while observing the peeled skin.

Conclusion

Up on the manufacturing and testing of the potato peeling machine, the peeling device can be used in peeling other thin-skinned horticulture products. Though stripping may lead to a significant loss, this machine’s projected average quantity of potatoes will be peeled by 5 kg. The water pressure greatly determines engine design. Though stripping may lead to a significant loss, the machine would be easy to operate and cheap for middle-class farmers.
